Chocolonely Brownies from Briony Williams

When we told Briony Williams – star of the Great British Bake Off and host of the next South West Fair Trade Business Awards – that Bristol is celebrating its 15th year as a Fairtrade City, she thought it was the perfect excuse to do a bit of baking! These indulgent brownies make the most of readily available Fair Trade ingredients, but the real star of the show is the generous chunks of Tony’s Chocolonely. With nine irresistible flavours of their 100% slave-free chocolate to choose between, by our calculations that’s a lot of brownies to get baking!
Tony’s Chocoloney Fair Trade Brownies
Makes 12
Ingredients
400g Fair Trade golden caster sugar
200g unsalted butter, melted
75g Fair Trade cocoa powder
4 medium eggs
250g plain flour
½ tsp baking powder
1 tsp salt
180g Tony’s Chocoloney Chocolate (pick your favourite flavour – I love milk caramel sea salt!)
Method
Set the oven to 200°C/180°C fan. Grease and line a 20cm brownie tin.
In a bowl, mix together the sugar, melted butter, cocoa powder and eggs until smooth. Add the flour, baking powder and salt and mix until combined. Chop up the chocolate into small pieces and mix into the batter.
Pour the batter into the prepared tin. Bake for 30-35 minutes. Leave to cool in the tin or enjoy warm with a big dollop of ice cream!
