Fair and Local Festive Banana and Chocolate Spread Bread

South West Fair Trade Business Award winners The Community Farm are championing Fair and Local through their vegetable boxes – providing the best of organic fruit and veg, which customers can top up with groceries, including Fair Trade options. This recipe makes the most of the ingredients available through their online organic box orders.

Ingredients

3 overripe Fairtrade bananas *
2 eggs *
125g unsalted butter *, softened
1 tablespoon local or Fair Trade honey
2 tablespoons natural yoghurt *
250g plain or wholemeal flour *
2 teaspoons baking powder
½ teaspoon bicarbonate of soda
50g porridge oats *
1 teaspoon ground Fair Trade cinnamon
3 tablespoons Essential Fairtrade Hazelnut and Chocolate Spread *

Method
Preheat the oven to 180°C (gas mark 4).
Mash the bananas until smooth, add the eggs and mix together.
In a large mixing bowl beat the butter until light and fluffy. Add the mashed banana and eggs then mix well.
Stir in the honey and yoghurt.
Sift together the flour, baking powder and bicarbonate of soda, combine with the oats and cinnamon, then gently mix into the banana mixture, so it is well combined.
Line a medium loaf tin with greaseproof paper, pour half the mixture into the tin and spread into the corners.
Dollop spoonfuls of hazelnut and chocolate spread evenly across the mixture, then top up the tin with the remaining mixture.
Place in the oven for 45-50 minutes or until golden brown. Allow to cool fully before slicing.
